I have been hesitant to share this recipe. It's one of the few things I can say are truly mine. I wanted to make pumpkin bread, so I turned to Pinterest to find a recipe. I tried 3 different recipes, liking certain things about each one, and not totally loving either of them. I thought "Why not take what I like about each one and combine it?" That's exactly what I did...and I still didn't care for it. I tweeked and experimented for weeks and finally came up with a winner! Everyone loves it, even those who typically don't like pumpkin anything. If you try it, I'd love to know your thoughts! Comment below please!
Ingredients: 2 cups all-purpose flour, 1/2 teaspoon salt, 1/2 teaspoon baking powder, 1 teaspoon baking soda, 2 teaspoons cinnamon, 1/2 teaspoon ground nutmeg, 2-1/2 cups sugar 1-1/2 sticks (3/4 cup) butter, 2 large eggs, 1 15-ounce can 100% pure pumpkin (any brand is fine, except Dollar Tree's...not good!)
Directions: Mix dry ingredients in one bowl. Mix wet ingredients in another bow. Mix all ingredients together. Pour evenly into two greased 8 1/2" by 4 1/2" loaf pans. Bake 65-75 minutes. Let cool for 10 minutes, take out of pan and place on wire rack. Place a towel over the loaves and let cool completely.
*I have added chocolate chips in the batter and I have added chopped walnuts in the batter. Both are delicious! I used to sell this bread to make some extra money and the Chocolate Chip Pumpkin Bread was a big winner! As far as measurements, just pour in chocolate chips or walnuts into batter until it looks right to you (not too many, but a generous helping). Then, before placing in oven, be sure to sprinkle a few extra chocolate chips or walnuts on top (this makes them look pretty).
