Mississippi roast is a quick, easy, delicious dinner and is best served over rice. I love green beans, so I also fix green beans with this. I'll share a recipe later for "Shirley's Green Beans". I have made this roast for several people, and everyone I served it to absolutely loves it! Next time I make it, I'll add a picture.
Ingredients: 1 (4 lb) chuck roast, 8 pepperoncini peppers, 1/4 cup pepperoncini juice, 1 stick of butter, cut into small squares, 1 packet ranch dressing (original is best), 1 packet au jus gravy mix
Directions: Place roast in crock pot. Place pepperoncini peppers and juice around roast. Sprinkle the ranch dressing and the au jus gravy on top of the roast. Put the butter squares on top of that. Cook on low for 8 hours.
There are several thngs I love about this recipe. One is, it's delicious, yet so simple! It's also very versatile. I've made it with mashed potatoes and I've seen it made with egg noodles.. You can also add veggies like potatoes and carrots to make it a more traditional roast if you like. I cook it for my grandparents quite often and my grandfather loves it served over rice with a generous helping of the "gravy" poured over top!
